Barbecue Sauces in the UK (a RANT about buying better sauces)

Gen­er­ally based on Toma­toes, Sugar, Vin­egar and Spices, it tends to be the cheaper sauces that con­tain the most sugar and the least fla­vour. I am always dis­ap­poin­ted to see pre pack­aged BBQ packs in the super­mar­ket ready coated with cheap sug­ary BBQ sauces sup­pos­ibly ready to cook, I can­not think of any­thing worse to cook on a BBQ.

BBQ’s by their very nature provide heat in extremes, with flames and cold spots as the fat drips and the char­coal burns. BBQ sauces should only be added at the end of cook­ing, once the meat has been well cooked. Any fla­vour in the BBQ sauce is then not been burnt away and lost to the flames is burned to the skin mak­ing a bit­ter mess, the tend­ancy is then to uncook meats like chicken to save the sauce.

If you are going to mar­in­ade meat before cook­ing, I would recom­mend using dry rubs, if well developed they will add fla­vour and res­ist burn­ing (we sent a lot of time cre­at­ing Hot-Juan’s BBQ rubs, test­ing the ingredi­ents to see what burned away, before we found a mix that worked on the BBQ or in the grill).

I can recom­mend a few BBQ sauces that work well, are not over sweet, but will still provide a sticky fin­ish and above all com­ple­ment your food, either add them at the last few minutes of cook­ing or to the meat on the plate.

If you can keep away from cheap BBQ Sauces with sugar and water as the main ingredi­ents, you BBQ will taste bet­ter and you will retain more friends, so just check the labels next time you buy some. Rant complete.

The Chilli Pep­per Company’s Pro­to­type Chilli Pasta Sauce

The Chilli Pep­per Com­pany has sent us a new chilli pasta sauce they have been devel­op­ing, the sauce is being tar­geted as a every­day pasta sauce for the chilli lover, to be used as is or cooked with mince.

I have no idea of the ingredi­ents, this being a blind taste test, I am are going to serve this as recom­men­ded by Ger­ald with Fusilli (also called pasta twirls). As the sauce has been cooked dur­ing man­u­fac­ture we are going to just stir it in to the hot freshly cooked pasta.

This is a smooth sauce, but thick enough to provide a good coat on the pasta. The first fla­vour is tomato, but it is just part of the fla­vour (some of the sauces we have tried seem to be just tomato puree), there is a good chilli warmth, hot­ter than nor­mal super­mar­ket fare, but not hot enough to dis­cour­age all the other fam­ily mem­bers. It is very inter­est­ing sauce, at points dur­ing the tast­ing, I got hints of basil and lemon in the mix and it made a very enjoy­able lunch.

I would be very happy to add this to my shop­ping list, and can­not wait to see the ingredi­ents list.

Opened in 2005 the Mid Devon Chilli Farm grows a wide range of chil­lies in poly tun­nels near Exeter in Devon, Their range includes on of my favour­ites Pimi­en­tos de Padron as well as Aji Pep­pers, Ban­galore Tor­pedo, Carib­bean Red Hot, Cay­enne Pep­per, Dev­ils Tongue, Fatalli, New Mex­ican Big Jim, Orange Habanero, Ring of Fires, Scotch Bon­net, Wrinkley Old Men, Indian G4, Indian G9 and Big Sun Habanero.

They pro­duce a wide range of sauces, pre­serves as well as spices for sale all year around, with the fresh pep­per avail­able dur­ing the season.
