My Daugh­ter Lizzi is a very good cook, she has a light hand with bak­ing, I asked her to come up with a recipe for today, she said “I will make you some­thing spe­cial!” and she did!

Lizzi’s Chilli and Apricot Blondies

Every­one must of heard of the com­bin­a­tion chil­lies and chocol­ate even if they have never tried it, cor­rect? Well If you haven’t your miss­ing out! We decided that we wanted to use dried apricots with it, but you could use other fruits!

Ingredi­ents
200g/7oz but­ter
300g/10½oz qual­ity white chocol­ate, chopped
3 medium eggs
150g/5oz caster sugar
½ tsp pure vanilla extract
200g/7oz plain flour, sifted
pinch of salt
100g Dried Apricots
1 large fresh red chilli, de-seeded
1 large fresh green chilli, de-seeded
100g/3½oz caster sugar – for the chil­lies
150ml/5fl oz water

Instruc­tions

  1. Pre-heat your oven to gas mark 4
  2. Chop — roughly 5mm pieces — and boil the chil­lies with the 100g caster sugar and the water and sim­mer for 5 mins
  3. Melt the but­ter and 150g of the chocol­ate in a bowl, over a pan of boil­ing water until combined
  4. Beat the egg, vanilla essence and sugar in a bowl until combined
  5. Pour in butter/chocolate combination
  6. Fold in flour and salt.
  7. Chop roughly and add the dried apricots and chocol­ate and stir in along with the drained chillies
  8. Put in a grease-proof lined bak­ing tray and bake for 25 mins, until golden brown!
  9. Cut into pieces of your own choice (depend­ing how hungry you are!) and serve hot with ice cream or cooled later on!

Other Things you could try are:

  • Using Milk Chocol­ate and make them brownies
  • Use Dried mango or papaya
