It is odd but this is the first time I have tasted a Lingham’s sauce, I have seen them about for years, but always passed them by, expecting it to a cheap, sweet concoction, with little depth of flavour, maybe I have become a sauce snob!
The business was founded over 100 years ago in Malaysia around 1908 by a Mr Lingham who developed his sauce to satisfy the genteel palate of the English living in nearby Georgetown, the current company was incorporated in 1971, they have developed the original 1908 product into a range of five sauces.:-
- Linghams Chilli Sauce
- Lingham’s Chilli Sauce with Ginger
- Lingham’s Chilli Sauce with Garlic
- Lingham’s Chilli Sauce with Ginger & Garlic
- Lingham’s Thai Chilli Sauce
They are now distributed in over 20 countries, and can be found in most UK supermarkets
Ingredients: Chilli (30%), Ginger (10%), Garlic (10%), Sugar, Vinegar, Salt.
On opening the bottle, the enticing smell hits you, ginger and garlic fill the air, the sauce is a deep red colour, as I tip some on the my plate, it starts to run quickly from the bottle, it is not watery, but is not a thick gloop ether.
I did not expect this to be a hot hot sauce, the first taste is again similar to smell, ginger and garlic, and then followed by a hint of heat which grows a little over time, nothing to hot, in fact it is very pleasant, idea as a dipping sauce with spring rolls, or with rice.
I guess the best comparison would be to a Thai dipping sauce, but without the pieces of chilli and seeds, the low price of £1.95 makes this sauce usable every day. This bottle will be used very quickly in our household and may find its way into allsorts of recipes, if for nothing else but the ginger and garlic flavour.
