Tapatio Salsa Picante Hot Sauce
Tapatio is pronounced “Tah-pah-tee-o” and means a person from Guadalajara, a city in the heart of Mexico.
The business was founded in 1971 by Jose-Luis Saavedra in Maywood, California. Over the year the business has grown and moved to larger custom built 30,000 Sq foot factory in Vernon, California.
I came across this product a few years ago and imported a few bottle for my own consumption, During a recent visit to Hot-Headz I have now found that they have some in Warehouse, with more stock on it way.
Ingredients: Water, Red Pepper, Salt, Spices, Garlic, Acetic Acid, Xanthan Gum, Sodium Benzoate as a preservative.
This is a liquid sauce not unlike the consistency of a Louisiana style sauces, you will notice that the product does not list Vinegar in its ingredients list, but it still has a smell and taste of vinegar, the reason is that Acetic Acid is used as and ingredient, it is this that gives vinegar its sour taste.
The sauce has a deep bright red colour, and has a lovely sour peppery smell with hints of garlic. This sauce has a sour and salty flavour with only a mild hit of heat, the heat does not last long, but as the initial flavours subside there is a definite roasted pepper flavour that lingers.
This sauce is a great condiment sauce, fantastic on chips instead of salt and vinegar, try adding it to mayo or cottage cheese for a dip, it is ideal to bring out the flavours of other foods, it would also work well as the basis of a buffalo wing sauce, or in a Bloody Mary.
The label is a little on the plain side, but don’t be put off. I must highly recommend this sauce, it needs to be on your table at home ready to add to whatever needs a bit of a pickup, go and buy some today, you won’t regret it.
