Sorry about the head­line, but we have just been given the latest Scov­ile rat­ing for the 2010 crop of the Infin­ity Chilli

Over the past few years we have seen to worlds hot­test Chil­lies get hot­ter and hotter.

The one that every­body knows is the Bhut Jolokia at 1,041,427 SHU (Scov­ile Heat Units), then word spread about the ori­ginal Infin­ity Chilli test res­ults at 1,067,286 SHU, which the Chil­liPep­per­Pete Naga closely piped with 1,086,844 SHU.

Now the Infin­ity is back with new res­ults for the 2010 crop, it has a whop­ping 1,176,182 SHU, that is almost 100,000 hot­ter that any­thing else tested before.

A 100,000 SHU increase to 1,176,182 is a massive jump when you think that Mad Dog Inferno Hot Sauce comes in at only 90,000 SHU and that hot sauce is about 18 – 20 times hot­ter than the jalapeño which is what most nor­mal people think is a hot chilli.

We don’t expect the heat race to fin­ish here, there seem to be a lot of very hot pep­pers around the world that have not yet been fully tested, but we think Fire Foods has a win­ner on it’s hands with the Infin­ity Chilli if it can get quant­it­ies to mar­ket in the next few years.

ThaiSt­ing — Sweet Chili Sauce”

The Bee Sting range is from the Half Moon Bay Trad­ing Com­pany, who‘s Iguana range of hot sauces have been a favour­ite of mine for many years.

On open­ing there is a strong smell of gar­lic and ginger, the sauce is a semi trans­lu­cent orange/red with lots of chilli seeds and pieces of chilli flesh float­ing in the mix.

Ingredi­ents: Water, Sugar, Corn Syrup, Tomato Paste, Crushed Dried Red Pep­per, Mod­i­fied Corn Starch, Honey, Gar­lic, Salt, Cane Vin­egar, Onion, Ginger, Beet Powder & Ascor­bic Acid (Vit­amin C).

The ini­tial taste is from the gar­lic and ginger, with the heat from the chil­lies warm­ing the back of the throat, this is not a very hot sauce, but it does leave a nice sticky honey taste on the lips.

The label design is excel­lent, very bright and appeal­ing, but at £3.99 for a 148ml bottle it is a little expens­ive for a Thai style dip­ping sauce.

This would be a good accom­pani­ment to a Thai green curry, or as a fin­ish­ing glaze on ribs or chicken.
