The Ancho is a dried Poblano chilli, an essencial ingredient in Mexican cuisine. Its sweet fruity flesh and mild heat make it excellent for sauces, Moles (Mexican National Dish) and dips. With the Pasilla and Mulato it forms part of the trinity of chillies used in the Mexican national dish mole.

Rehydrate in hot water for 20 minutes before using.
