Hot-Headz - Hot Smoked Chilli Mustard

Its is BBQ time, and if you are not a great fan of BBQ sauce on you burger, then how about some hot mustard mixed with smoky Chipotle chillies

On opening this mustard smells a like a mild American Style Mustard, it does not have the nostril burning intensity of an English Mustard, but the colour is a deep orange/yellow with small flecks of red just about visible.

Initially the taste is of a mild American Style Mustard, but then the Chipotles and Jalapeños kick in, with that ‘O so good smoky flavour’, this is American Style mustard, but better, much better than any American Style Mustard I have tasted before.

This is just as I expected when I saw the jar, its a product  that is made for a BBQ’ed burger, add a slice of cheese, a few slices of pickled cucumber all warped up in a fresh bun and I don’t think you could find a better mustard to accompany it.

Ingredients: Prepared Mustard (Distilled Vinegar, Water, Mustard Seed, Salt, Turmeric, Spices) [62%], Chipotle & Red Jalapeno Chilli Peppers [31%], Onion Puree (Citric acid added as a natural preservative), Apple Cider Vinegar, Dried Chipotle Chilli Peppers.

The problem is now I have to make two burgers, one with this mustard and one with BBQ sauce, that blows the diet..

You get a good sized jar at 255ml for £2.99, I am very please this is not in a squeezy bottle, it makes sure that people do not over do it, while for most chilli-headz this is not hot, but very tasty, for any unexpected users, this could be a bit of a shock.

Mr Vikki's - Harry's 'Smokin' Ranch Sauce

This is a smoky BBQ sauce from Mr Vikki’s, and as we know from the past that Adam Marks (AKA Mr Vikki’s) is a master of making sauces, some of them taking years to develop, so this one is opened with great expectations…

This is a dark reddy brown colour with the odd chilli seed floating in the mix, on opening it smells amazing, tomatoes and smoky chipotle chillies burst from the bottle, the taste as close as I have come to to some of the best Kansas City style BBQ sauces I have tasted, but thankfully it is not as sweet. In the UK we seem to think BBQ sauce is a cheap product full of sugar and caramel colouring  and this is what we find in our supermarkets.

Back to the flavour, it is instantly smokey, but not the acrid chemical smoke you find in cheap so called smokey sauces, this is then followed by the rich tomatoes, vinegar and soy sauce, so well balanced is this sauce, I can get the hint of celery right at the end. All of this is warmed by the Chipotle chillies, which have not just provide the heat they are the source of the natural smoke flavour.

Ingredients: Tomatoes, Vinegar, Brown Sugar, Chipotle Chillies, Soy Sauce, Garlic, Spices, Celery, Salt.

This is not a sticky sauce, it does not need to be, it is thick with quality ingredients, it would easily coat a rack of ribs with out problem, if you look at supermarket BBQ sauces you will see sugar at the top of the ingredients and the even sweeter high fructose corn syrup is often in there as well, while sugar is needed in this style of sauce, it does not add flavour, it just cheap and sticky…

This sauce is not cheap £4.00 per bottle, but it is still excellent value for money, there is a big flavour here waiting to get out.. you can order on-line or find your local stockist  at www.mrvikkis.co.uk

Captain Thom's Thai Monkey

The story goes that “Captain Thom and the crew, after fishing along the Great Barrier Reef, made a stop in Thailand, to sample some of the hot and spicy Thai food. Overhearing a story from one of the local street vendors about a Mystic Book of Recipes. We made an excursion into the interior jungle, where we found the legendary Monkey King and the rare book. The Monkey King was so impressed by our love of spicy foods that he presented us with the mystical book. This hot sauce is a product of that book.”

The sauce come in the standard 148 ml/5 oz bottle it is dark brown in colour with a few seeds visible in suspension, on opening there is the unmistakable smell of sweet Teiyaki sauce, but it is not just that there is also big hints of Wasabi ( AKA Japanese green horseradish) that gives this an unmistakeable tingle in the nose and at back of the throat.

The source is thick and sticky, ideal for use on the BBQ but only at the end of cooking (Don’t burn this kind of sauce, it is not a marinade). The taste is sublime, sweet Teiyaki soon gives way to some hot chilli heat and then the Wasabi and finally the roasted peanuts, it is not an extreme heat sauce, but it is exceptionally good, it is hard to stop tasting it just for that initial bust of flavours.

It stuff  is just a great sauce, while it does not completely full fill my need for heat, but it sure gets close to being the most interesting Teriyaki style sauce I have tried, my lips are tingling with that combination if Wasabi and Chilli.. fire up the BBQ its time for some chicken.

Ingredients: Teriyaki Sauce (Soy Sauce, Sugar, Sherry Wine, Corn Syrup, Pineapple Juice, Distilled Vinegar, Corn Starch, Burgundy Wine, Pineapple Juice Powder, Salt, Garlic Powder, Caramel Colour, Potassium Sorbate, Water, Natural Flavours), Pineapple Juice, Water, Onion, Spices, Wasabi, Thai Peppers, Peanut Butter (Roasted Peanuts, Sugar, Partially Hydrated Vegetable Oils, Salt), Garlic.

I think I have already said how good this is, but it really would be one of my favourite BBQ sauces for chicken, the only problem is that the bottle may not last long enough, at £4.99 a bottle it is not cheap, but well well worth it, Darth and Mrs Naga would just love this stuff.. even on a vegie BBQ, but can I save what is left till they visit next… probably not.. Sorry guys
