Chillichutneyman

Nitro Naga Biohazard Edition

Happy new year my chile padawnz, i hope you all had an awesome time over the festive period and are now well rested and ready to enjoy another year with the Chilefoundry as i know i am!

The sauce i’m reviewing today comes from a guy known as the “Chillichutneyman” and after reviewing a few of his products here on the Chilefoundry i doubt he needs any introduction, suffice to say that other than selling his products at markets and suchlike near where he lives, a fair number of his products are exclusive to www.scorchio.co.uk and this is one such sauce!

Ingredients: Tomatoes, Onions, Garlic, Dried Naga Chillies (3g), Dried Red Chillies (5g), Herbs, Spices, Mustard Powder, Sugar (19g), Worcestershire Sauce, Malt Vinegar, Ginger, Salt (1.25g), Pepper, Scorchio Biohazard 6.4m Extract, Water.

As you can see from the ingredients list, i knew that “Nitro Naga Biohazard edition” was gonna be a major eye opener for myself and my friend Jody, yep thats right i managed to convince Jody to do another sauce review, and yet again his reaction is priceless but he was a little better prepared this time. I grabbed the sauce and as Mrs Naga started the camera rolling i gave a little explanation of the ingredients and who sells the product (www.scorchio.co.uk) before going on to fill a teaspoon for Jody, and a tablespoon for me, i agreed to the tablespoon so as i could accurately feel what Jody was going through, seeing as my tastebuds are a little more hardened to the heat..the results of which are below!

Sooooo as the video shows, the sauce itself is very tasty and quite sweet, it tastes very much like the extreme version but with the heat kicked up to 11 so i can only deduce that seeing as the ingredients are the same and the flavour is the same but with more heat, this is a simple heat increase with the use of Scorchio’s own excellent “Biohazard 6.4m extract”.

What you have here is a hot sauce that comes in two versions (the extreme one we reviewed here http://www.chilefoundry.co.uk/?p=3394) so its perfect for those people who like it hot, or REALLY REALLY F*****G hot, both are available exclusively at www.scorchio.co.uk @ £3.99 for the “Extreme” version(150ml) and £5.49 for the “Biohazard” version(100ml)…and trust me, if you like it HOT then buy the biohazard version, its well the extra cash!!

Until next time chilefanz i hope this year treats you well and i look forward to meeting you at the upcoming chilli festivals 2010 has to offer, so until then may the sauce be with you!!!

Lingham’s Ginger Garlic Chilli Sauce – It is odd but this is the first time I have tasted a Lingham’s sauce, I have seen them about for years, but always passed them by, expecting it to a cheap, sweet concoction, with little depth of flavour, maybe I have become a sauce snob!

ChilliPepperPete’s – Chicken Xacuti (Shakuti) – This recipe comes from ChilliPepperPete, it is a traditional Goan Recipe. Goa is located along India’s west coast along the Arabian Sea and was part of Pete’s travels around India. Chicken Xacuti (pronounced Shakuti) has been described and Chicken in coconut gravy.

Blairs's Death Rain Crisps

Blairs's Death Rain Crisps

Blair’s Death Rain – New UK Flavours – I love crisps (US Translation Chips) a few years ago we make our own Hot-Juan Brand Crisps so I know how hard it is to make a new flavour and to get it consistant, I have always loved Blair’s Death Rain Habanero crisp, every packet is hot and crunchy, and his other flavours Chipotle and Cajun are also excellent, each with there own unique flavour.

Christmas Rumours – Santa’s Shit – We hear rumours that ChilliPepperPete is making a Christmas special – Santa’s Shit, we will let you know more as soon as we taste it!

ChilliPepperPete’s – Vindalho Recipe – One of my favourites has always been the Vindalho. And then I had it in Goa 20 odd years ago cooked by our landlady and it was a totally different experience. I will move on to other countries from now but as I said earlier I have had a Goan food fixation for 20 years. We are now selling Goan curry blends in the shop that are made in Goa and are excellent. – “Pete Seymour AKA ChilliPepperPete”

The Chilli Pepper Company – Witches Brew Review – The bottle itself is typical of the CPC range and comes with a high gloss label on the front, complete with title and a strange grey looking witch stirring a cauldron! I do enjoy seeing Ged’s new labels when they come out as they are always fun to see, the sauce inside this bottle is a lovely red colour with flecks of black, bits of pepper flesh and the occasional seed floating about in the liquid!

ChilliPepperPete’s?—?Mole Poblano – Mole Poblano is a festive meal hailing from Oaxaca in Mexico. Oaxacan food is the consistently the best quisine in Mexico. Mexicans use a lot of mild chillis up to the jalapeno/chipotle heat but outside of the yucatan its unusual to find anything hotter. The chillis are used for flavour as well as heat and this recipe could be many hundreds of years old and in one form or another has come down from pre conquistdador times. Its very involved but can be cheated with our ready potted mole poblano which is a simplified version of this recipe. Its a great leftover turkey recipe for boxing day. – “Pete Seymour AKA ChilliPepperPete”

Cajohns Gourmet – Scorch Review – The sauce comes from “Cajohns Gourmet” and as you might remember I reviewed their “Vicious viper” back in june and was’nt impressed mainly because the product had ALOT of heat but a not so nice flavour to it, so due to this I am a little apprehensive of this current sauce, but nonetheless lets continue!

Its not often I write reviews on sweet things such as jam, more often than not Hot Juan writes the jam and chutney type reviews as my palate clearly has a thicker asbestos lining, but of course if I am reviewing a jam then you all know it can’t be an ordinary chilli jam, and you’re right, it isn’t!

Nitro Naga?—?Naga Jolokia Chilli Jam

Nitro Naga?—?Naga Jolokia Chilli Jam

This jam comes form the one and only “Chillichutneyman” a lovely gentleman by the name of Bryn, and someone I have chatted with a few times before, the “Nitro Naga” range being one he makes for Karl and co at www.scorchio.co.uk, and as such this jam is’nt like any other, it contains my FAVOURITE chilli which also happens to be the hottest chilli in the world to date, so without any more jabbering on, lets begin!

Ingredients: Dried naga chillies, tomatoes, ginger, thai fish sauce, garlic, red wine vinegar, caster sugar, muscavado sugar, coriander, salt.

Okay, so the two top ingredients on the list did’nt exactly scream “PERFECT JAM INGREDIENTS” to me either, but I decided to persevere unhindered by the ingredients list. “Nitro Naga: Naga jolokia chilli jam” as this fine product is known comes in a mid size 185ml jar, its the kind of jar you’d see homemade jam in at farmers markets and the like, but this is no ordinary homemade jam! The lid and label are pure black, save the yellow title and flames licking up the sides, (the base of the flames actually depicts a devils head, something I only just noticed LOL!) the “Scorchio” logo is also present as is the description of the jam within, “Sweet and hot” it proclaims, yet only a taste test can be the judge!

I opened the lid and took a good ol “Darth Naga” whiff and instantly the smell of Naga chilli blended with brown sugar and vinegar hit me, not an unpleasant smell mind you, but certainly unexpected given the position of tomatoes on the ingredients list, the sauce has a wonderful thick but pourable consistency not at all like the mass market jams of today which are basically sugary jelly. The colour is a deep caramel sort of colour (no doubt from the muscavado sugar) with Naga seeds suspended here and there in the gloopy mix, i dipped my tasting spoon into the jam and scooped out a nice amount to truly get a good idea of the flavour.

Placing the spoon into my mouth, I noticed straight away that this stuff tastes EXACTLY as it smells! The naga flavour was there with a lovely sweet tang to it..it actually reminded me of christmas! I know its odd to say but this jam reminded me of mince pies and christmas cake and pudding and mincemeat and just the general smell and taste of christmas, the heat soon broguth me down to earth but not with a bang I am pleased to say!

The heat is an all round the mouth burn that is similar to the “Nitro Naga Extreme edition” sauce I tried a while back, and while its not the sort of hiccup inducing heat you would get from raw Naga’s its definitely a building burn that WILL increase the more you consume this jam!

The heat level and flavour of this jam combined make this a perfect morning or bedtime treat, have it on toast, muffins or crumpets before work, before bed or even BOTH! Have it with peanut butter for a nice hot PB+J sandwich, heck have it with whatever requires a sweet edge with a medium kick of heat! I’m gonna have to save this jar now till boxing day to have with cold leftovers and toast! (unless bryn wants to send me another jar *wink*)

At a mere £3.49 a jar available exclusively at www.scorchio.co.uk this is not a condiment to be missed, it will go well with alot of things, and i implore you to try it on a few things and let me know how it is! I’m a vegetarian so i can’t have it on much other than Quorn and vegetables which is fine for me, but does’nt really give you readers a good idea of what it goes with!

Until next time chilefanz!! May the sauce be with you!!

WhyNotHot - Unhinged

WhyNotHot – Unhinged Video Review – This sauce comes from a company that was completely unknown to me before the West Dean Chilli Fiesta in august, “WhyNotHot” are a small business based on a smallholding in Cwmgwili, West Wales, they have been around for about 3 years now and the company is comprised mainly of Ben Calder and his fiancées, who grow fresh chillies and try to use their own in the sauces they make where they can.

The Chilli Pepper Company – 8 Ball Hot Chilli Sauce – Now, this little sauce proclaims itself to be in the “Hot Chilli Sauce” category, however i disagree! “8 Ball” is a sauce that i feel is more suited to the “Padawan” category, it’s a sauce that is more for those tired of mass market bullshit and who want to break into the underworld of non-mainstream chilli products, but let me tell you it does a wonderful job!

make us a brew!?–?mint & chilli tea – The story goes – One night, Mr Scruff was making a stir-fry, unknown to him, a small goat was asleep on the floor, he tripped over the goat sending the ingredients flying. Fortunately, most of it landed in the frying pan, except for some chillies which landed in his mint tea. Whilst cooking, he drank some of his brew and had a nice surprise. From this point, he started putting chilli in his mint tea, and offered it to guests, who also liked it. So he decided to make his own mint and chilli teabags, as not everybody has a goat in their kitchen!

Fire Foods – UK Chilli Forum - I am a member of a number of Forums and discussion groups that talk about chillies, sauces and general hot food, but one I joined a few months ago has surprised me for the amount of activity.

How to stop the chilli burn - The magic ingredient in Chilli that burn us is capsaicin, it does not as burn the taste buds, but reacts with receptors in the mouth making us think our mouth is being burned, capsaicin is an oil, so to dilute it we need to mix it with other oils or things that will stick to oil.
