Sinful Sauces Fatalii and Juniper Pickle

Sinful Sauces are one of the great success stories in the UK chilli market during recent years. In less than two years Paul & Kelly (who are based in Northampton) have turned their fledgling venture into a real success story, winning the ‘Best Newcomer’ and ‘Best Label’, 2011 National Chill Awards.

I first met Paul & Kelly at their stand in the West Dean Fiesta 2011 and as well as finding them to be affable and bounding in enthusiasm despite the chaos of the crowds overwhelming their stall, I found their product ranges to have some unique & great tasting combinations. So I was really looking forward to tasting their latest pickle, ‘Fatalii & Juniper’ when they kindly supplied me a jar of it for review.

The label on the jar has the distinctive gothic like Sinful ‘S’ on a glossy black background containing other smaller grey gothic ‘S’s. Simplistic in design but very unique and eye catching.

Ingredients: Fatalii Chillies (80%), Onions, White Wine Vinegar, Rapeseed Oil, Juniper Berries, Black Pepper, Lemon, Lime, Garlic, Spices.

Looking at the ingredients I know I’m in for a “heat treat“ given the percentage of Fatalii chillies used. The Fatalii chilli originates from the central / South Africa region and has a citrus, fruity flavour and a serious kick, with the chilli being rated between 100,000 to 300,000 Scoville units. The other more unusual ingredient listed is juniper berries. I say unusual because although I’ve tasted Juniper berries before I’ve never had them with chillies. Juniper berries are primarily known for being the key flavouring for Gin (Gin being a shortening of the word ‘Genever’ which is Dutch for ‘juniper’) but they are also used in cuisine to make a juniper berry sauce which is used to accompany game meats such as pheasant, rabbit and venison.

Opening the jar and inhaling I first begin to smell the distinctive aroma of the juniper berries along with the citrus tones from the Fatalii’s and hints of lemon. I can also detect the scent of the onion, rapeseed oil and white wine vinegar. In combination all these ingredient give the pickle a light and very fresh scent. Taking a spoonful of the product out of the jar I can see it is mustard yellow in colour. It has a fine texture with the Fatalii flesh and finely chopped onion and pieces of garlic being clearly seen, but I can also see some juniper seeds and flecks of pepper in the body of the pickle.

As I eat the spoonful I clearly taste the flavour of the juniper berries mixed with the citrus flavour of the Fatalii’s. I can also discern the flavours of the rapeseed oil and white wine vinegar which balance well with the citrus tones. Surprisingly the taste of the onion and garlic present comes through more subtly than I expected – the citrus & juniper flavours work really well together here in ensuring that the flavours of the onion and garlic are kept in check and don’t dominate. Overall the result is a very light, clean and fresh tasting pickle. This is something of a wolf in sheep’s clothing however as pretty quickly the heat from the chillies kicks in and the burn begins to envelop my mouth. It’s a nice hot burn and as I eat more of the pickle I can feel my lips beginning to burn and as well my sinus cavities clearing.

The labelling suggests this works really well with game, red meat, chicken, fish & cheese. Unfortunately I don’t have any game meats to hand so I try the pickle “ploughman’s style” with some good cheddar cheese, and I have to say it works fantastically well in combination with it. So much so in fact that I soon realise that with all this tasting I’ve gotten through ¾ of the jar!

Sinful Sauces has just announced a new hot pickle with an very unusual combination of flavours.

Fatalii - A close relative of the Habanero, it originates from central Africa, they have a distinct citrus flavour.

Juniper -  The Juniper berry comes from Juniper tree, they are probably best know in the UK for flavouring Gin, they have been used around the world for such odd things as a cure for Diabeties and as a female contraceptive.

This must be almost the simplest sauce possible it is approx 80% Fatalii Chillies with some vinegar and a little preservative to help retain the colour, this should be an excellent opportunity to taste the chilli in it’s base form.

The Fatalii is not in the million plus range of chillies, but at 100,000 to 300,00 Scovile units it is hot enough, this sauce is an amazing orange yellow colour

On opening the bottle the smell from the sauce has a citrus almost lemon hint to it, the flavour is amazing, there is a again a slight fruity flavour before the heat kicks in WOW for something under the ½ million mark it was a lot hotter that I expected. A second taste of this and the heat is less of a slap in the face and there is quite a complex flavour hiding in there, it is reminding me of cardamom’s mixed with oranges and lemons.

My mouth is taking a while to cool down from this, it has the power to linger with attitude, I love it..

Ingredients: Fatalii Chillies, Distilled Vinegar, Citric Acid & Ascorbic Acid (Vitamin C) to preserve colour.

CaJohn’s also produce Cayenne, Habaero, Chipotle, Serrano, Jalapeno and Red Savina purée’s and I am sure there will be others, the label image on the front of the bottle looks great, but the white text on the back is to small to read easily against the yellow sauce.

The sauce  and some of the other purée’s are available from Hot-Headz and at £5.99 a bottle, it is not cheap, but the bottle is packed with fruit and attitude

Okay now thats out of the way, lets crack on with the review. The sauce myself and Binbagz reviewed a couple of days ago is a hot one to say the least, but then thats not surprising considering who actually makes it! Cajohn is a guy from Columbus, Ohio who started out life as a Fire chief with the Columbus fire department, but after a while he realised that putting fires out was’nt his thing, and that he preferred starting fires..in peoples mouths!

Ingredients: Bhut Jolokia chiles, Fatalii chiles, Vinegar, Natural flavours.

“Mongoose” is one hell of a sauce it has to be said, my experiences with Cajohn’s sauces have’nt been great to say the least but this sauce has truly converted me! It all starts with this awesome little black gift box, that has what looks like a mongoose on the front coming out of the dark with a snake in its teeth, couple with the title this seriously looks like the cover of some horror b-movie and the contents tell a pretty similar tale!

The bottle inside is much smaller than most sauce bottles as you can see from the video, it looks a little like a medicine bottle and at 59ml alot of people are gonne be thinking “Hang on a minute, thats a bit crap for £8!” but fear not!, if I did’nt think it was worth buying I would slate it as opposed to sing its praises, if theres one thing my readers know of me its that I am honest and fair in my reviews, and this is no different!

SEE??? SEE THAT???!! when I said this sauce was insane I bloody well meant it! As myself and Binbagz have pointed out during the video, the extract flavour (Cajohn puts his extract under the heading “natural flavours”, mainly because it is a natural product!)is very well hidden by both the Naga (YAY!) and the Fatalii chillis and as such this makes a very nice flavoured sauce that literally grabs you by the plums with its heat level and won’t let go unless you ask really, REALLY nicely!
