Peperoncino Aglio Olio e Peperoncino

This is our first review of a products from Peperoncino, they are an Italian Chilli Food business based here in the UK (Stanwick ,Northants), their food comes from southern Italy where the Chilli has become part of the culture.

The company name Peperoncino (pronounced peh-peh-ron-chino) means‘hot little pepper’ in Italian, and the first product we are reviewing is called “Aglio, Olio e Peperoncino” which translates to “Garlic, Oil and Hot Pepper”, which is almost the complete recipe.

Ingredients: Fresh Chillies 57%, Fresh Garlic (17%), Rapeseed Oil, White Wine Vinegar, Extra-Virgin Olive Oil (5%) & Salt.

We decided to cook some pasta and stir a few teaspoons of this into the pasta, while we cooked the pasta we opened the jar to smell a wonderful fresh aroma of chillies, garlic and oil, this could have been made moments ago in our own kitchen, the colour was also a very bright red with a few chilli seeds visible in the mix.

While we waited what seemed an age (5 mins) for the pasta we tried a little on a spoon to taste, and while not rocket hot, it gives a good bit of warmth and again tastes just as if it was freshly made, nice garlic flavour and very little  flavour from the vinegar.

When the pasta was ready we stirred in a couple of heaped teaspoons, almost instantly the air was full of a wonderful aroma, so we quickly tucked into the pasta. This is just what the doctor ordered, the chilli again was not overly hot, but it builds nicely, each mouthful quickly followed by another, the smiles getting wider and wider.

I saved a couple of spoonfuls back to try as a pasta salad, and again this did not last long, using this lunch takes just a few moments to pre-pair, on the jar they recommend using this as a topping for bruschetta, again this sounds wonderful.. and there is just enough left in the jar.

Unfortunately we could not find this on the web site www.peperoncino.co.uk at the moment but their jars of Italian inspired products range from £3.25 to £4.95, the site needs a little work on the navigation (who’s is perfect) and there are few pages awaiting some content.

Fresh Chillies

Fresh Chillies

Quite often I am given a few chillies in my travels, and I have looked for a way of using them so I can taste then in a standard way, I know I could just eat them, but often they are just too dam hot.

The answer is a very simple hot sauce with just 3 ingredients , that can be made in moments from what I always have in the fridge. This recipe is also very useful when you are growing chillies and the first few are just ripening.

I like simple recipes, and I find less can be more when it comes to finding flavours, oftern so much is added to recipes ro make them consistent, this recipe is great as while it is simple and quick, it is almost never the same twice.

Very Simple Fresh Chilli Hot Sauce

Prep Time: 5 minutes

Yield: Just enough..

Ingredients

  • 1-4 Fresh Chillies
  • 1-2 tbsps Extra Virgin Olive Oil
  • 2-3 tbsps Lime/Lemon Juice

Cooking Directions

  1. Slice the chillies in half and de-seed them, I do that as I want the fresh chilli flavour not just heat.
  2. Place everything in a small blender and blitz until smooth
  3. This sauce does not keep for long so just make as much as you need,

15 Chilli Sauce

15 Chilli Sauce

Our family of 8 went away for a short break a few weeks ago, and we took a number of Chilli products to test with us, a surprise product in our selection was a sauce from the South Devon Chilli Farm call simply “15“.

When I say unusual, this is because of late we have had a lot of single variety sauces arriving at ChileFoundry HQ, the great thing about Single Variety Sauces, like Single Malt whiskeys is that you can start to understand the flavour of that chilli (In whiskey terms, the area/distillery), so with a number sauces on offer to the family, why did they almost finish the whole bottle of “15″ in the first few days?

Ingredients: Fresh Chillies (60%), Cider Vinegar, Lemon Juice, Salt.

The sauce is a pale orange colour with the consistency of Tabasco sauce, but much less salty, it has a very pleasant sweet smell from the cider vinegar, but it is the taste is exceptional, it is not heat just for heat sake, in fact is is not a very hot sauce, but it has a well rounded warmth that is very hard to pin down in terms describing the flavour, but  enough to say the combination of chillies and cider and lemon juice it sublime.

We used it in/on almost everything, and now unfortunately the bottle is now almost empty, I had to save the last few drops for a final taste before writing this review. I do hope that South Devon Chilli Farm can recreate this sauce consistently (i.e. which 15 Chillies and what proportions) as I am sure this will be a winner.

South Deveon Chilli Farm

Growing over 10,000 chilli plants the South Devon Chilli Farm has grown a lot since it opened early in 2003.

Run by Jason Nickels and Steve Waters with up to 5 staff at busy times. The farm is spread between two locations and is situated approximately halfway between Torquay and Plymouth.

The main site is near the village of Loddiswell and is approx 10 acres with a small shop that they open all year round, 7 days a week, between 10am-4pm. There is also a show poly tunnel in which they display examples of the varieties they grow. The second site is in South Milton and consists of 4 poly tunnels

With 2,500 square meters of chilli plants, they harvested over a million chillies last year alone.

Their online shop sells Fresh Chiles during the season (July – November), Smoke and Dried chillies, Chilli Powders, Chilli Chocolate Preserves, Sauces and even a range of seeds.

Their latest range of products includes a Extreme Bhut Jolokia Sauce, Mash and Jam.

They have a wholesale online shop of their stockists, who while mainly in the south west can also be found as far away as Derbyshire and Cumbria, a complete list can be found on their web site. They have even got some of their products for sale on Amazon

A number of foodie celebrity including Jamie Oliver and Tom Parker-Bowles (We like Tom as he referenced my book a number of times) are amongst their fans.

They seem like a very forward thinking business whose growth is base on good service and products, we hope during the summer to visit them and bring back some pictures for you to see.
