The Chilli Garden&#8217;s Jalapeno &#8216;n&#8217; Mint Sauce neatly fits a gap left by the sometimes tiresome bravado of the chilli sauce world&#8217;s heatmongers, delivering an interesting product you can use outside of the traditional fried fish and sausages.</strong></p><p>This a low-heat sauce for less robust foods. It works well with salad, for instance. The flavour&#8217;s sublime, packing a bunch of mint over a refreshing body of spring water and fresh jalapeno. It&#8217;s not trying to be anything it&#8217;s not, and what it does it does well.</p><blockquote><p><strong>Ingredients</strong>: Jalapeno Chillis (40%), Mint (5%), Distilled Vinegar, Spring Water, Sea Salt, Xanthan Gum.</p></blockquote><p>There&#8217;s quite a sharp vinegar hit on the nose, and the gum adds a gloopy edge to the consistency, but that shouldn&#8217;t detract from this must-try. Clean, green, summery and well executed, it&#8217;s a welcome diversion from the norms of jolly rogers and power-heat.</p><p>It appears to be out of stock at the moment, unfortunately, but you can take a look at the rest of <a

href="http://www.thechilligarden.co.uk" target="_blank">The Chilli Garden</a> is a small family run business in  Healey Hampshire, all the chillies in their sauces are grown on the farm, and they use some interesting traditional methods of production, this sauces is fermented for over 24 months before being bottled, something not many small producers can afford to do (I will let you think about one major american sauce producer who makes sauces in this way?).</strong></p><p>The Basque part of the sauce comes from the Basque Gorria Chilli which has a Scoville Rating between 2,000 and 5,000 SHU&#8217;s, when ripe it is a vibrant red colour. This is not a pepper you often seen grown in the UK and as far as we know The Chilli Garden are the only artisan sauces maker growing and using them.</p><p>The Thai Dragon in this sauce is providing the heat and at between 75,000 and 250,000 SHU&#8217;s, this is a hot chilli, they are commonly found in Asian dishes, and a healthy plant will produce around 200  chillies about 6cm long and 1cm wide tapering to a point (one of my favourites to grow).</p><p>The sauce is a light red almost orange colour, with some very small flex of red chilli skin being visible,even without any thickeners of gums this sauces need no shaking, it is a wonderful consistency. On Opening the bottle I can smell the Vinegar and salt, it is not at all overpowering.</p><blockquote><p><strong>Ingredients</strong>: Thai &amp; Basque Chillies (21%), Distilled Vinegar (77%), Sea Salt (2%).</p></blockquote><p><em>Bottle kindly provided by <a
href="http://www.thechilligarden.co.uk" target="_blank">The Chilli Garden</a></em></p><p>My only reservation with this sauce is the bottle top, it has one of those plastic pouring thingamajigs that always gets in the way, l do hate them&#8230; but once that has been removed, this is a very enjoyable sauce, it is a definite savoury sauce, a nice hit of heat ( we are not in the super hots) and flavour all carried by a salty vinegar liquid.</p><p>The recipe may seem simple only three ingredients Chillies, Vinegar and Salt, but the execution is excellent, well worth the 24 plus months wait.</p><p>This stuff is a bit like a Tabasco on steroids ideal for dipping your chips in, or making the heavenly Bloody Mary  at only £3.00 for a 150ml bottle this is amazing value for money, highly recommended.</p><table

class="wp-caption-text">The Chilli Jam Company - Chillirissa</p></div><p>We have a jar of their Chillirissa, which is a mix of Onions, Sun Dired Tomatoes and Chillies with Garlic, sugar and spices, it was developed to be used in cooking to add both heat and flavour.</p><p>On opening the jar, the contents is a thick light red/orange paste with a lovely smell of garlic and onions, the taste is wonderfully hot and pungent, the initial taste is from the onions, quickly followed by the chilli and then the richness of the sun dried tomatoes, this leaves a beautiful flavour in the mouth, it is hot and rich and yes I am really enjoying this.</p><blockquote><p><strong>Ingredients</strong>:- Onions, Sun Dried Tomatoes, Fresh Red Chillies (12.5%), Garlic, Sugar, Spices and Salt.</p></blockquote><p>This makes an great dip when added to yoghurt the same mix can even be used as a marinade, or how about just stuffing some under the skin of a chicken breast and roasting in the oven.</p><table

href="http://www.wholesome-food.org.uk/" target="_blank">The Wholesome Food Association</a>” (a self policing body for small holders and farmers which holds the principals of organic farming in highest esteem).</p><p>Only their own chillies are used in their sauces, Jam and Jellies and are free from all artificial ingredients, we have reviewed some of their products in the past and they come highly recommended.</p><p>Their range includes some very interesting products I don’t think I have seen a jam’s or Jellies made with Hungarian Hot Wax Chillies, they also have a Thai Basque Hot Sauce that combines Thai Dragon Chillies with Basque Gorria Peppers, I cannot wait to try them.</p><p>Please visit them at <a

class="wp-caption-text">Ol&#39; Clooties Sauce</p></div><p><strong>There are not many sauces that look this colour, with the light behind it, it is almost luminescent orange, this is not achieved with artificial colours but is all natural made with Scotch Bonnet and Caribbean Red Habanero’s chillies grown by The Chilli garden in Hampshire.</strong></p><blockquote><p><strong>Ingredients:</strong> Habanero Chillies 50%, Distilled Malt Vinegar (43%), Sea Salt &amp; Xantham Gum.</p></blockquote><p>On opening the sauce, there is a strong smell of fruity Habanero and malt vinegar, the taste is as good as the smell, it is salty and hot very much in the Tabasco style, but hotter, much hotter</p><p>It is worth examining this sauce’s ingredients, it is a very simple list, just chillies, vinegar and salt.  And like many simple things, simple is best, there is no strange after taste, no unidentified bits floating about. It may seem a simple recipe, but getting the balance right takes time and practice.</p><p><em>Note: The Xantham Gum is added to the mix to help keep the ingredients in suspension.</em></p><p>As you can probably tell I like this kind of sauce, its the  just the kind of thing I use everyday, it is in the Louisiana style of sauces but in this case it is English.</p><p>Now it comes to the Goat on the label, I am sure there is a good reason for this, I suspect he is called Ol’ Clootie, but how he became involved in Hot Sauce I am yet to find out.</p><p>You can order online at <a

class="wp-caption-text">The Chilli Garden - Scotch Bonnet Sauce</p></div><p>I like to see sauces that are made with a single variety of chilli, it feels like getting a single malt scotch to try,  (A pleasure I enjoy) I hope that I will be able to the chilli over the other ingredients.</strong></p><p>The Chilli Garden is a small family run business based in Hampshire, they grow all their own Chillies,  in 5000m2 of  greenhouses , They are members of the Wholesome Food Association and are working towards full organic status, with no herbicides, pesticides or any other unnatural products used.</p><p>They only use the finest ingredients to make their own Chilli Jam, Jelly, Sauces and even chocolate, the sauce comes in a 150ml bottle and has an unusual light orange colour with very attractive style labels (<a
href="http://www.chilefoundry.co.uk/?p=2413">See earlier article regarding label problems</a>).</p><blockquote><p><strong>Ingredients:- </strong> Scotch Bonnet Chillies (40%) Distilled Malt Vinegar (48%), Sea Salt &amp; Xanthan Gum.</p></blockquote><p>On opening the smell is of a spiced malt vinegar, the sauce is lightly thickened with the addition of the Xanthan Gum, which is one of the sauce makers super ingredients as a very little of it with increase the viscosity of a sauce without changing the taste, as an ingredient it has been around since the 1960’s.</p><p>The sauce tastes salty with a hot with a fruity tang from the Scotch Bonnet it is a typical Louisiana style sauce, excellent as part of a dressing or a condiment with roast potatoes.</p><p>I like this sauce a lot, I can see myself using this with lunch today (Roast shoulder of Lamb with new potatoes)</p><p>You can order online at <a
