Julie & Jamie at the Wiltshire Chilli Farm have had a busy 2011 setting up a new business and developing their range, well to start 2012 they have produced a range of Chilli based Salt and Pepper Ginders, each has a unique flavour. They are ideal to pep up any meal, I can see myself taking the Chipotle version with me when we get that chance to go to the beach for fish and chips (already waiting for the warm weather).

From Dorset With Love - Piccalilli

From Dorset With Love - Piccalilli

From Dorset With Love is a new business, set up by Chrissy and Karl, who while visiting a Pub (Don’t all business start that way) noticed the pub served a chutney make with a rival brewers ale, so with a few bottle of the local ale they set off to make their own.

They source all their ingredients as locally as possible using pick your owns and farmers markets

We noticed then at the Sherbourne Castle Country Fair, they had a late booking and so did not have the best position, but the products all tasted fresh and well made.

We selected to review their Piccalilli first, while we know this has no chilli in it, it was an exceptional good when tasted in one of the only cold wet day we had this May.

The Piccalilli comes in a square 240g jar, on opening there is that nice confidence pop that shows the Piccalilli was packed when nice and hot. The smell is to die for, mustard and vinegar with hints of onion and turmeric.

The jar is packed with chunks of veg that are cut nice and small, but have retained their shape so are easily identifiable, a nice big spoonful and this is almost as good as it smells, the veg still has a nice bite to it, show that it has not been over cooked and the brining stage has not been rushed.

They have used a old family recipe from Chrissy’s Mum and it is a great start, I would add a little more mustard to give it a bit more warmth, and of course a little chilli would be good..

Ingredients: Cauliflower, Carrot, Celery, Cucumber, Tomato, Onion, French Beans, Courgettes, Calabrese, Pepper, Sugar, Cider Vinegar, Flour, Mustard, Salt, Turmeric.

At £3.50 for a jar it is good value, I have enjoyed this so much I have almost finished half the jar while writing this. We tasted a few of their other Jams, Jellies and Chutneys at the stall, and they all showed a great attention to getting the flavour and consistency right. You can order on-line at www.fromdorsetwithlove.co.uk, do try the Piccalilli and we also recommend the Strawberry and Balsamic Vinegar Jam and the Hot Bengal Chutney (Not yet hot enough, but very tasty).

They will be attending The Great Dorset Chilli Festival where they are bring some new hotter chilli products.

Gringley Gringo - Jalapeno & Ginger Dipping Sauce

Gringley Gringo - Jalapeno & Ginger Dipping Sauce

We have not covered a product from Gringly Gringo in a while, but this bottle of Jalapeno & Ginger Dipping Sauce has such a beautiful colour, I could not reset any longer.

The picture really does not do it justice, the sauces is a wonderful translucent yellow with a hint of green, on opening these is a very pleasant smell from the  Jalapeno’s and fresh Peppers, with just a hint of Ginger

Ingredients: Yellow Peppers, Sugar, Lemon Juice, Malt Vinegar, Water, Jalapeno Chillies, Ginger, Xanthan Gum.

The first flavour is from the jalapenos and peppers, no real heat here, which is no surprise, but it is a well balanced flavour with the ginger and lemon gently tingeing my tongue I am ready for another spoon full.

This sauce could be enjoyed by all the family, as a dipping sauce it is hard to beat, but how about added also added to freshly cooked noodles or mixed with olive oil as a salad dressing.

In 1965 Lionel Hitchen formed Lionel Hitchen (Essential Oils) Ltd to manufacture concentrated citrus oils, over the years the business diversified into the manufacturer of Oleoresins.

Oleoresin Manufacturing Processes

Oleoresin Manufacturing Processes

Chilli Oleoresins form a interesting part of their range, they are produced using only the best quality raw materials, the chillies are ground and then placed in solvents to extract the active ingredients , the solvent is then distilled off in a vacuum to produce a highly concentrated oleoresin.

Oleoresins are highly stable when compared to fresh ingredients and are extremely resistant to microbiological contamination, providing a 100% reliable product in terms of flavour and strength.

Lionel Hitchen can provide extracts from a range of chillies including:-

  • Arbol - Primarily used to make sauces, but used in soups and stews, caramel, lollipops, and pan-coated confectioneries.
  • Habanero - Used in salsas, chutneys and Caribbean cuisine, mixing especially well in salsas with fruit.
  • Ancho - With a mild heat, it is used in mole, enchilada sauces, tamales and stews.
  • Chipotle – Used in soups, stews, ketchups and also in Chocolates where they provide a unique experience.
  • Jalapeno - Their popular use in “nachos” has made them a mandatory ingredient for sauces, dips, cheeses and snacks.
  • Guajilli - This chilli is the base for rich chili con carne and classic Tex-Mex cuisine. Guajillo are traditionally used in Mexican cuisine, from mole sauces to stews.

There range does not just include chillies but oleoresins from Aniseed, Basil, Bay, Caraway Oleoresin, Cardamom, Cassia , Celery Leaf, Celery Seed, Chive, Cinnamon, Clove, Coriander Leaf, Coriander Seed, Cumin, Cumin Roasted, Dill, Fennel, Garden Mint, Garlic , Ginger, Laurel, Leek, Lemongrass, Lovage, Mace, Marjoram, Massoia, Nutmeg, Onion, Oregano, Paprika, Parsley, Pepper, Pepper Bell, Pimento, Sage, Savory, Spearmint, Rosemary, Tarragon, Thyme, Tomato, Turmeric.
