Mr Filbert's Extra Virgin Rapeseed Oil with Chipotle Chillies

Mr Filbert’s extra virgin rapeseed oil is grown and cold pressed in Dorset from a single variety of seed. It is lower in saturated fat compared to olive oil and contains naturally occurring Omegas 3, 6, 9 and Vitamin E, so sounds like a good oil to me, the smoked Chillies come from The South Devon Chilli Farm and have been oak smoked, so both the ingredients are local UK products, not many food miles here..

I have seen a lot of infused oils over the past couple of years, we have even make a few our selves, it is not hard thing to do, but it can be messy and making things in small batches can lead to inconsistency, some of my oils are a lot hotter that others.. This oil is never going to be a hot, it starts with the just 1% of Chipotles which are not high up in the heat arena, but this is a gourmet product where the quality of the oil and the added subtle flavour from the Oak smoking of the chillies make all the difference.

A fan as I am of Olive oils, but locally produced rapeseed oil is just fantastic, I know it has not been adulterated is supporting local UK farmers. I have been reading a lot lately about the Olive Oil industry and it seems that it is becoming a  major area for fraud and product adultery, with criminals moving to food fraud instead of drugs and other high tariff offences.

Ingredients: Cold pressed Rapeseed Oil (99%), Smoke Chipotle Chillies (1%).

I love using rapeseed oil at home, it’s yellow colour and nutty taste make it ideal for salad dressing, or just dipping fresh bread in it, but add the smoky Chipotle and this is true gourmet food. Try using it where ever you would use olive oil make, on the Mr Filberts web site they have a recipe that use it in Guacamole, but I have even used it to make a very yellow Mayo that only lasted a few hours before we where scraping the pot..

Peperoncino Aglio Olio e Peperoncino

This is our first review of a products from Peperoncino, they are an Italian Chilli Food business based here in the UK (Stanwick ,Northants), their food comes from southern Italy where the Chilli has become part of the culture.

The company name Peperoncino (pronounced peh-peh-ron-chino) means‘hot little pepper’ in Italian, and the first product we are reviewing is called “Aglio, Olio e Peperoncino” which translates to “Garlic, Oil and Hot Pepper”, which is almost the complete recipe.

Ingredients: Fresh Chillies 57%, Fresh Garlic (17%), Rapeseed Oil, White Wine Vinegar, Extra-Virgin Olive Oil (5%) & Salt.

We decided to cook some pasta and stir a few teaspoons of this into the pasta, while we cooked the pasta we opened the jar to smell a wonderful fresh aroma of chillies, garlic and oil, this could have been made moments ago in our own kitchen, the colour was also a very bright red with a few chilli seeds visible in the mix.

While we waited what seemed an age (5 mins) for the pasta we tried a little on a spoon to taste, and while not rocket hot, it gives a good bit of warmth and again tastes just as if it was freshly made, nice garlic flavour and very little  flavour from the vinegar.

When the pasta was ready we stirred in a couple of heaped teaspoons, almost instantly the air was full of a wonderful aroma, so we quickly tucked into the pasta. This is just what the doctor ordered, the chilli again was not overly hot, but it builds nicely, each mouthful quickly followed by another, the smiles getting wider and wider.

I saved a couple of spoonfuls back to try as a pasta salad, and again this did not last long, using this lunch takes just a few moments to pre-pair, on the jar they recommend using this as a topping for bruschetta, again this sounds wonderful.. and there is just enough left in the jar.

Unfortunately we could not find this on the web site www.peperoncino.co.uk at the moment but their jars of Italian inspired products range from £3.25 to £4.95, the site needs a little work on the navigation (who’s is perfect) and there are few pages awaiting some content.

Sinful Sauces - Habanero & Cardamom Pickle

This is my first product review for the ChileFoundry and it’s for a product that just lately I’ve been enjoying on an almost daily basis. The product I’m referring to is a Habanero & Cardamom Pickle made by Sinful Sauces. It’s a pleasure to be able to review a Sinful Sauces product, not least because we’ve known Paul & Kelly from Sinful for a year or so now and we have seen Sinful grow from being a fledgling project to an actual reality. I remember when shortly after meeting them both, they left me with several bottles of sauce in the development stage of production and even then, all of the sauces were in my view, very special. Paul and Kelly both have an infectious enthusiasm which has driven Sinful Sauces onwards and upwards to a point where a fantastic range of chilli products is in production and ready to buy.

One of the Sinful Sauces products stood out for me when I got those early pre-production samples; it was the Habanero & Cardamom Pickle. I tasted an awful lot of chilli products last year and whilst most of them were great, only three or four really stood out for me and had the wow factor. When one of those is a pre-production sample, it’s fair to presume that great things are destined to come from the producer of it.

Rather than tell you what I think about the pickle at the end of the review, I’m going to do it now; my opinion is that it’s fantastic – bordering on perfection. I know that I need to qualify a statement like that, so that’s what the rest of this review will aim to do.

Upon opening the jar, I can see a thin layer of rapeseed oil covering the pickle. I can see pieces of garlic, cardamom seeds and I’m pleased to be able to see decent sized pieces of habanero chilli. It looks wonderfully spreadable. The smell is familiar and I’m guessing that the spice blend has an Indian influence. It’s time to taste the pickle; I load a good sized blob onto my cracker and into my mouth it goes. The first thing I notice is just how fresh and zesty the pickle is, probably as a result of the lime being in there. Then I get the spices with a hint of cardamom. The garlic is a flavour which for me, seems to come in as the heat is fading, adding yet another dimension to an already complex product. About the heat; as you’d expect from a habanero product, it’s substantial, but not to the point where you don’t want, or can’t have more of the pickle.

Ingredients: Orange Habanero (80%), Cider Vinegar, Rapeseed Oil, Onion, Spices, Garlic, Lime, Mustard, Cardamom (2%).

I guess my point is that what Paul & Kelly at Sinful have created, is a pickle with a spectacular balance of not only flavours, but sensations too. Using the ingredients they chose to use and getting the right balance isn’t easy; too much of one or not enough of another would make for a pretty ugly product. As a sauce maker myself, I know that some products have a bit of give in them and you might be able to get away with a small degree of imbalance with the ingredients, but I don’t believe that’s the case with products like this because so many of the ingredients have such strong qualities. Everything must be right. I like the fact that the garlic flavour isn’t overpowering and comes in after the burn, I like the initial freshness and I like the slow building habanero burn. I like the fact that I can spend a minute or two enjoying a mouthful as one flavour takes over from the last. And I like the fact that although hot, I can carry on eating it for as long as I like. The heat balance is spot on. The two percent cardamom content is just right; cardamom can be extremely overpowering and it has to be used with caution. Sinful have got this spot on. I can taste the cardamom but it never dominates.

So, what can you eat this pickle with? Well, I haven’t found anything that it doesn’t go with yet. I’ve had it with bacon, cheese, sausages and with eggs which have been done various ways. It’s very good spread across a meat joint fifteen minutes before the end of cooking and I’ve also coated a steak in it prior to cooking.

Do yourself a favour and get yourself a jar of this directly from the Sinful Sauces website. It’s a top-class, tasty pickle from a top-class outfit. As the guys themselves would say, it’s so good, it’s sinful and only £3.95  for a 110ml jar.

SDCF - Rapeseed Infused Chilli Oil

Collaboration between South Devon Chilli Farm and The Seed Co (Now Filbert’s Fine Foods) , has resulted in this chilli oil. I have in front of me a small bowl of the oil and some fresh crusty bread for dipping.

Rapeseed oil does not have the flavour of some of the better Olive oils, but it light nutty flavour works very well when infused with the chilli, the chilli is not over powering, else this oil could be a dangerous weapon in the kitchen for roasting.

Ingredients: Rapeseed Oil (99%), Dried Chillies (1%).

Adding the chillies to the oil is not an instant process, they first steep the oil with a carefully selected blend of hot dried chillies, before filtering the oil, they then add just a few flakes of milder chillies to the oil, which is what we can see in the bottle.

I have used rapeseed oil in my kitchen for a few years now, it is a great universal oil, it makes the best roast potatoes, and is also makes a great base for a salad dressing. Practically all of which are enhanced with the use of this chilli oil version.

Oils like this are not cheap, but at £4.50 for a 250ml bottle it offers excellent value for money, it is available direct from the South Devon Chilli Farm or via there ever expanding  network of retailers
