The Lakes Chilli Fest — Levens Hall

The third Lakes Chilli Fest will be held on the 14th and 15th of August 2010 from 10 a.m. until 4 p.m. Set against the spec­tac­u­lar back­drop of Eliza­bethan Levens Hall, vis­it­ors to the Chilli Fest can also explore the world fam­ous gar­dens where the sum­mer bed­ding and herb­aceous bor­ders will be at their best.

The Chilli Fest provides enter­tain­ment for all the fam­ily. Over forty stalls, some of which are new this year, will offer chilli-related goods such as jams, jel­lies, chocol­ate and sweets, ice-cream, sauces, seeds, plants, chut­neys, cloth­ing, breads, oils, cor­di­als etc. Vis­it­ors will be able to sample foods from Mex­ico, Thai­l­and, India, Morocco and Ger­many as well as many renowned products from Cum­bria, many of whom are going ‘hot’ for the occasion.

Live music will be provided on both days by the Mil­nthorpe Steel Band and enter­tain­ment by street enter­tainer Maynard Flip Flap, Salsa North West (join in and learn to salsa!) and Janet Allen the face painter. There will be a chilli trail in the garden and other games for chil­dren run by the garden­ing team together with all the other attrac­tions that the Levens gar­dens offer such as the children’s adven­ture play­ground, the wil­low labyrinth and ‘have a go’ croquet.

Lively cook­ery demon­stra­tions will be given by Nick Mar­tin, Prett Tejura of Curry Cuisine , John & Soy Rigg of The North­ern School of Asian and Ori­ental Cook­ing and Ricardo Rodrig­uez. There will also be inform­at­ive talks by Chris Crowder the Head Gard­ner at Levens Hall and Mar­garet Robin­son of Robin­sons Seeds and Plants of For­ton, Chelsea Gold winners.

Russell Williams explains how to make your own Oleoresin at home

I thought it was time to share my method of heat extrac­tion from the beau­ti­ful chilli pep­pers out there. You want to increase the heat without adding volume? Then Oleor­esin is for you!

My sauce, ‘The Evil One’ which was my first attempt at a super­hot sauce, owes its credit to Oleor­esin of the Blair’s dried jolokia chilli I used. Oleor­esin is the nat­ural oil found in most plants and herbs, but with chilli as well as heat, it also con­cen­trates the flavour.

What you need to do is dry out your pre­ferred chilli pep­per. 110c in an oven is per­fect for a couple of hours, split the pods or leave whole, it doesn’t mat­ter. If you prefer, pur­chase them ready dried, Chil­lipep­per­pete, Hot Headz and Scorchio all carry excel­lent varieties.

Once dry, crush with pestle and mor­tar (or use a blender but try hold­ing your breath as the dust is potent!) and then pop into a seal­able glass jar. Just cover with a grain alco­hol, I use vodka, cheap stuff from the super­mar­ket gave exactly the same res­ult as Black label Smirnoff, so don’t worry, the chilli is the most import­ant ingredi­ent, then lid on, good shake, pop in the fridge. When you remem­ber, over a week to 10 days, give it a shake.

After the 10 days, gently pour out into a fun­nel lined with a cof­fee fil­ter paper, over another glass jar. Allow to com­pletely drain. In your ori­ginal jar, pop the chil­lies back in and repeat the pro­cess (yes, 3 weeks to make it!). In the 2nd jar, you’ll have a very hot chilli vodka. Now place a piece of kit­chen roll over the top and tape it on, you don’t want any­thing to fly into it, over the next week, this will allow the vodka to evap­or­ate. After the second time you drain the chil­lies into the same jar, dis­pose of the fil­ter paper well, tied in a car­rier bag so no one touches it. Again, cover with kit­chen roll and tape it on. Another week and you’ll be left with a thick oily residue. Oleor­esin. This is going to be the pure heat from the pepper.

Basic­ally that is it, I am enter­ing ‘The Evil One’ again in Brighton this Septem­ber, and I used Chil­lipep­per­petes Naga’s this time, it has come out a lot hot­ter than the last time I made it, so if you wish to taste it, I hope­fully will have a spare bottle for the chil­li­heads out there to try!

ChileFoundry Newsletter — July 2010

Another bumper month of chilli news and our first video site visit to Hot-Headz, now we are look­ing for­ward to report­ing from the UK’s Largest Chilli Event the West Dean Chilli Fiesta on the 6/7/8th August, we hope to see you there.

Sure, online videos per­tain­ing to fiery foods are no new thing, but I’ve bat­ted around the idea of some­thing closer to a chile and hot sauce related tele­vi­sion pro­gram for many a moon. I finally decided on a com­prom­ise of sorts; it would be a multi-segment video pod­cast hos­ted on You­Tube. My “pilot” epis­ode deb­uted a few weeks ago, and now that my yearly vaca­tion (or as your Brits would call it, “going on hol­i­day”) is mostly done, I can focus on cre­at­ing a new video every week.

The Chilli Jam Com­pany – Chil­lirissa — On open­ing the jar, the con­tents is a thick light red/orange paste with a lovely smell of gar­lic and onions, the taste is won­der­fully hot and pun­gent, the ini­tial taste is from the onions, quickly fol­lowed by the chilli and then the rich­ness of the sun dried toma­toes, this leaves a beau­ti­ful fla­vour in the mouth, it is hot and rich and yes I am really enjoy­ing this.

Nando’s New and Improved Tomato and BBQ Sauces —  A few weeks ago I picked up a couple of bottles of New Improved Nando’s Peri-Peri BBQ Sauce and Peri-Peri Tomato Sauce in my local super­mar­ket (Yes some­times we have to pur­chase sauces), unfor­tu­nately I had not tried the pre­vi­ous ver­sion of these two products so I can­not tell how much they have improved.

Grill­stock Hosts The Infam­ous Fiery Foods UK Chilli-eating Con­test — At Grill­Stock 2010 our very own Darth Naga will be host­ing the Fiery Foods UK Chilli-eating Con­test. The con­test is being held next week­end as part of Grill­stock on Sat 17th & Sun 18th July at 4pm on the Har­bourside in Bris­tol, con­test­ants will get to be the first to try this season’s 7 Pot, Bih Jolokia, Trin­idad Mor­ouga and of course the Chil­lipep­per­pete Naga (which last year meas­ured an astound­ing 1,080,000 SHU’s).

Pep­pers By Post Open Day — 22nd August 2010 — This year the Pep­per By Post open day is on the 22nd of August. Vis­it­ors will have the chance to walk around our poly­tun­nels and green­houses and see all the chil­lies we are grow­ing. The open day is a Pep­per by Post and Sea Spring Seeds event, so as well as chil­lies there will be other veget­able tri­als on show, includ­ing a sweet pep­per and a tomato trial in the tun­nels, and other veget­ables out­doors. Fresh chil­lies, seeds and pot­ted chilli plants will be avail­able for sale. There will be some talks and cook­ery demon­stra­tions as well.
