Jim Duffy of Lakeside California is a Chilli Grower who runs the web site Refining Fire Chillies which provides seeds and plants in the USA.

Our great thanks to Scott Roberts for putting this youtube video up on this site. I have an BBQ like this at home, but have never been 100% happy with the results, maybe I will give it another go after watching this video.. Now the problem is finding this cut of meat in a UK butcher..

New blood joins the team

This month we put out a call for some new contributors to help with stories and articles, many thank to all of you who have sent in articles, we will be running them over the next few weeks, two have already been published and we would like to welcome Patrick Garratt and Marty Greenwell to our team.

Next weekend is the West Dean Chilli Fiesta, an event not to be missed, 20,000+ people, 120+ stalls over 3 days. Darth Naga will be there making Videos with Mrs Naga all weekend, while I will be there on the Friday, if you see us please do introduce your selves, somone must read this Magazine/Newsletter??

Scott Roberts Top 10 Hot Sauces

A couple of weeks ago I was asked by fellow hot sauce aficionado Scott Roberts to create a list of my top 10 favourite sauces, this was not an easy task, over the past few years I have tasted 100′s of sauces, many of which did not last long, lucky I reviewed most of them, so I could look at my tasting notes and see what was exceptional.

Scott asked that I did not try to rate them as a 1-10 listing, if he had it would have taken me weeks to decide, as it was I spent many hours adding product to the list and then changing my mind soon I had about 25 sauces in the list, then I had to select the 10…. well I am sorry if I left out some excellent sauces, but reducing 100′s to just 10 is nearly impossible, but here is my list.
