It is the kind of book we all needed when we started, it provides a quick history of chillies, describes what makes them hot and does a good job with a guide to the main varieties and growing techniques. It is unfortunately a little US centric, I guess  we have to expect that as it is the target market for this publisher.</strong></p><div

class="wp-caption-text">Angela Garbes - The Everything Hot Sauce Book</p></div><p>The best part of the book is recipes with over 150 to try, some are a little bit to simple, like making chilli Mayo with Mayo as the main ingredient, I would use our <a
href="http://www.chilefoundry.co.uk/2011/05/26/quick-and-simple-home-made-chilli-mayo-recipe/">simple Mayo recipe</a> instead, but apart from that they all look interesting with well written instructions, but no illustrations or pictures.</p><p>In the middle of the recipe section was a short history/guide to manufactured bottles sauces, but this only covered a few styles (Tabasco,  Sriracha, Louisiana and Mexican Hot sauces, before providing some recipes for their use.</p><p>The recipes take you from making your own hot Sauces and Pastes, to Salsas, Dry Rub and Mixes, and then on a world tour to Mexico , Texas and the Americas before  departing to Europe, African and Middle Eastern and finally Asian dishes, before covering the general subjects of Pickling and preserving and then drinks and desserts.</p><p>To make thing simple for us metric users there is a conversion guide in the back of the book, as all the recipes are in odd-looking cups and pounds..</p><p>So to sum it all up, A good book for anyone starting in Chillies, ideal gift, but a bit US centric, but still worth adding to your collection, I am sure to use the recipes as a reference guide, but it could do with some more photographs and illustrations.</p><table

href="http://www.thechilligarden.co.uk" target="_blank">The Chilli Garden</a> is a small family run business in  Healey Hampshire, all the chillies in their sauces are grown on the farm, and they use some interesting traditional methods of production, this sauces is fermented for over 24 months before being bottled, something not many small producers can afford to do (I will let you think about one major american sauce producer who makes sauces in this way?).</strong></p><p>The Basque part of the sauce comes from the Basque Gorria Chilli which has a Scoville Rating between 2,000 and 5,000 SHU&#8217;s, when ripe it is a vibrant red colour. This is not a pepper you often seen grown in the UK and as far as we know The Chilli Garden are the only artisan sauces maker growing and using them.</p><p>The Thai Dragon in this sauce is providing the heat and at between 75,000 and 250,000 SHU&#8217;s, this is a hot chilli, they are commonly found in Asian dishes, and a healthy plant will produce around 200  chillies about 6cm long and 1cm wide tapering to a point (one of my favourites to grow).</p><p>The sauce is a light red almost orange colour, with some very small flex of red chilli skin being visible,even without any thickeners of gums this sauces need no shaking, it is a wonderful consistency. On Opening the bottle I can smell the Vinegar and salt, it is not at all overpowering.</p><blockquote><p><strong>Ingredients</strong>: Thai &amp; Basque Chillies (21%), Distilled Vinegar (77%), Sea Salt (2%).</p></blockquote><p><em>Bottle kindly provided by <a
href="http://www.thechilligarden.co.uk" target="_blank">The Chilli Garden</a></em></p><p>My only reservation with this sauce is the bottle top, it has one of those plastic pouring thingamajigs that always gets in the way, l do hate them&#8230; but once that has been removed, this is a very enjoyable sauce, it is a definite savoury sauce, a nice hit of heat ( we are not in the super hots) and flavour all carried by a salty vinegar liquid.</p><p>The recipe may seem simple only three ingredients Chillies, Vinegar and Salt, but the execution is excellent, well worth the 24 plus months wait.</p><p>This stuff is a bit like a Tabasco on steroids ideal for dipping your chips in, or making the heavenly Bloody Mary  at only £3.00 for a 150ml bottle this is amazing value for money, highly recommended.</p><table

class="wp-caption-text">2011 TABASCO® Family Reserve</p></div><p><strong>Tabasco is probably the worlds best know chilli sauce, the business started in 1868 and just seems to get more and more popular, it&#8217;s provides a great introduction to the world of chillies and probably has done so for many many people over the generations. I think it was the first chilli sauce I ever tried.</strong></p><p>Each year is seems a selection of the finest Tabasco peppers are used to make a mash that may be destined for the special Family Reserve. These special peppers are mashed with a little of the Avery Island Salt and stored away in white oak barrels for 3 years, some of these barrels are selected to be aged for up to 8 years, the resultant mash is then used to create the very rare Family Reserve..</p><p>Now when we say rare there are probably more bottles of this than most of the UK&#8217;s craft producers make in a year, but as a percentage of the overall production, this is very rare indeed.</p><p>Well in 2011 the McIlhenny Company has decided to make and sell some of the Family Reserve, each bottle of Family Reserve is sealed with green wax and is adorned with a 2011 TABASCO<sup>®</sup> Reserve medallion certifying its authenticity.</p><p>Unfortunately you won&#8217;t find this in the UK, it is only available at the company store on Avery Island or on their US web site <a

class="wp-caption-text">Tabasco Sizzling Pepperoni Pizza</p></div><p><strong> I like Tabasco sauce, it is one of the first chilli products people get to try, who’s  has not got a bottle at some time in their lives, the salty peppery taste is unique, while not hot, it does have that certain something.</strong></p><p>Well if you like Tabasco and Pizza you are in for a treat, the Tabasco Sizzling Pepperoni Pizza is a well packed product, there is a good amount or Pepperoni, Cheese, peppers and tomato topping, the base it not to thick and chewy, but best of all you can taste the Tabasco infused across the pizza.</p><p>My daughter, Lizzi who has written for us before, tried it and gave it the thumbs up, while my son Ant, who does not normally like thing hot, enjoyed a slice as well.</p><blockquote><p><strong>Ingredients:</strong> Wheatflour, Mozzaralla Cheese, Tomato Puree, Pepperoni (10%), Tomato, Red Peppers, Green Peppers, Yellow Peppers, Rapeseed Oil, Tabasco Brand Pepper Sauce (1.5%), Semolina, Sugar, Yeast, Salt, Oregano, Tapioca Starch, Cornflour.</p></blockquote><p>I enjoyed this more than I expected, in the past many of these types of product have scrimped on the ingredients and play on the brand name to get you to purchase, this one is different.</p><p>Normally a £4 Pizza, but Tesco have it on offer at £1 off at the moment, so if you like Tabasco, pop in to Tesco’s and pick one up.<br

In technical terms the Chilli peppers are in the genus Capsicum which is part of the family Solanaceae making it related to the potato, tobacco, tomato and even the deadly nightshade.</strong><br

/><h3>Capsicum Annuum</h3><p>Capsicum annuum is the best known domesticated species in the world,  in the past 20 years the districtions between the Capsicum Annuum, Capsicum Chinense And Capsicum Frutescens has been called into question as at the primitive level you cannot distinguish between the three species, the fact that they will easily hybridize with each other helps with this conclusion.</p><p>It has spread to every part of the world becoming the dominant pepper globally, with the Bell pepper  in almost every fresh food retailer worldwide and hot spicy varieties a staple of hot cooking.</p><p>This was the species that Columbus introduced to Europe in the 1492.<br

/> Examples:</strong> Cayenne, Poblano, Anaheim, Jalapeno, Pasilla, Serrano</p><h3>Capsicum Baccatum</h3><p>The name baccatum refers to the characteristic of the wild species to be berry like, it probably originated from Bolivia, where there are the greatest selection of wild varieties can still be found.</p><p><strong>Examples:</strong> aji Amarillo, aji cereza, Bolivian Long, Christmas Bell</p><h3>Capsicum Chinense</h3><p>Some of the worlds hottest varieties are Capsicum Chinense which was named by Nikolaus Joseph von Jacquin (1727-1817), who mistakenly  named the species Chinense  in 1776, because he believed that they originated in China.  It is more likely to have come from Amazonian South America,  while it has also appeared sporadically throughout the Caribbean.</p><p><strong>Examples:</strong> Fatalli, Habanero, Naga Jolokia and Scotch bonnet.</p><h3>Capsicum Frutescens</h3><p>The main ingredient of the world most popular chilli sauce Tabasco is a Capsicum Frutescens is grown in large quantities in the Louisiana. <em>(Note: the upper case T for the brand and the lower case t for the chilli variety)</em>, Unlike most chillies the Tabasco chilli grows with the fruit pointing up rather than hanging from the plant as does the African Piri Piri.</p><p><strong>Examples:</strong> Piri Piri ( African Birds Eye), tabasco</p><h3>Capsicum Pubescens</h3><p>First domesticated over 6000 year ago. The Pubescens gets its name from the small hairs that cover the leaves and stalks, it is unlike any other domesticated pepper having large purple or white flowers infused with purple and fruits with brown/black seed. There are no wild varieties of this species, though it probably related to a number of other wild species (Capsicum eximium, Capsicum cardenasii, Capsicum tovarii).</p><p>Mostly cultivated in South America although small amounts are grown in Guatemala and southern Mexico, it is almost unknown in the rest of the world.</p><p>There are verys few varieties of this species, probably due to the fact is cannot cross-pollinate with other chilli species</p><p><strong>Examples:</strong> Rocoto, Manzano</p><p><h3 class='related_post_title'>Possibly Related Articles:</h3><ul
