The Chilli Garden Thai-Basque Sauce

The Chilli Garden is a small family run business in  Healey Hampshire, all the chillies in their sauces are grown on the farm, and they use some interesting traditional methods of production, this sauces is fermented for over 24 months before being bottled, something not many small producers can afford to do (I will let you think about one major american sauce producer who makes sauces in this way?).

The Basque part of the sauce comes from the Basque Gorria Chilli which has a Scoville Rating between 2,000 and 5,000 SHU’s, when ripe it is a vibrant red colour. This is not a pepper you often seen grown in the UK and as far as we know The Chilli Garden are the only artisan sauces maker growing and using them.

The Thai Dragon in this sauce is providing the heat and at between 75,000 and 250,000 SHU’s, this is a hot chilli, they are commonly found in Asian dishes, and a healthy plant will produce around 200  chillies about 6cm long and 1cm wide tapering to a point (one of my favourites to grow).

The sauce is a light red almost orange colour, with some very small flex of red chilli skin being visible,even without any thickeners of gums this sauces need no shaking, it is a wonderful consistency. On Opening the bottle I can smell the Vinegar and salt, it is not at all overpowering.

Ingredients: Thai & Basque Chillies (21%), Distilled Vinegar (77%), Sea Salt (2%).

My only reservation with this sauce is the bottle top, it has one of those plastic pouring thingamajigs that always gets in the way, l do hate them… but once that has been removed, this is a very enjoyable sauce, it is a definite savoury sauce, a nice hit of heat ( we are not in the super hots) and flavour all carried by a salty vinegar liquid.

The recipe may seem simple only three ingredients Chillies, Vinegar and Salt, but the execution is excellent, well worth the 24 plus months wait.

This stuff is a bit like a Tabasco on steroids ideal for dipping your chips in, or making the heavenly Bloody Mary  at only £3.00 for a 150ml bottle this is amazing value for money, highly recommended.

Is this a "Bird Eye" Chilli

This is one of the most common chillies available in the UK supermarkets and specialist shops, you can find it both fresh and dried, they are relatively hot at between 100,000 – 225,000 Scovile Units (SHU), but are we all taking about the same chilli, as there seems to be a lot of confusion about what they are!

In general they seem to be  about 1 – 3 cm in length and 0.5cm to 1cm in diameter, they are thin walled, packed with seeds and conical in shape, starting green and maturing to red.

Birds Eye chillies are found all over Africa and Asia, and is know by many local names such as Piri-Piri or Bird’s eye chili, Bird, African Devil, Boonie pepper, Cabe rawit (Indonesian), Cengek (Sundanese), Cengis (Banyumasan language), Cili padi (Malay), Kanthari mulagu (Malayalam), Kochchi (Sinhalese), Ladâ, Lombok rawit (Javanese), Phrik khi nu (Thai), Siling labuyo (Tagalog/Filipino), Thai dragon, Thai hot, Congo chiles, Mombassa chiles, Pequin chiles, Uganda chiles and Zanzibar chiles.

It seem that we are all confused where this chilli is a C.annuum or A.frutescens with different seed providers being evenly balanced on the subject, but we have even seen it listed at C.chinense.

For what is one of the most commonly available chillies, we are confused, it is probably lots of different variates, that look similar, a common name Piri-Piri translates in some languages to Hot-Hot while it others it has become the term for chillies.

Darth Naga reviews – Blair’s Ultra Death – Well its that time again chilefanz!! Today I bring you my latest video review, and I reckon this one may just go down in history as the second stupidest thing I have ever done (the first will hopefully be uploaded to youtube at some stage LOL!) stupid for the simple fact that after hearing from Rose Seymour that James beck said “we don’t use milk in our video reviews in the US” I decided to hit the bottom end of mental and do a vid review WITHOUT MILK!! But anyway, the sauce I am reviewing today comes from the godfather of the US hotsauce scene Mr Blair Lazar himself, and this particular sauce is famous for not only being the hottest sauce he mass produces, but also for being one of the only ones to have its name changed during his major rebranding last year!

David’s Chilli Oil – Much more than just a gourmet oil – This is not just an “Oil and Chilli” blend; there is a whole extra level of flavour to be found here and with Rape seed oil becoming the New Olive oil, its time may have come. I am sure you will see more and more gourmet products based on Rape seed oil.

ChilliPepperPete’s Easy Fish Jambalaya Recipe – Jambalaya is a Louisiana Creole dish of Spanish and French influence, it is a close relation to the Spanish paella. This version is made a little quicker and simpler by pre-cooking the rice, traditionally the rice would be added with the stock at the end of preparation and then cooked for 45-60 minutes.

Growing Chillies from Seed: Part 2 – Once you have some seedlings to pot-on (see picture 1), it is time to separate them and pot them in individual pots. We tend to pot-on gradually, so we use 3” pots first. Using very loose seedling compost will help this stage. We like to use vermiculite on the surface and perlite in the mix.
